1. You think Maui/Kauai are laid back. Try Molokai! The airport exit literally has a screen door like you’d see in an old spaghetti western. Kalaupapa (the Leper Colony) is kind of interesting (I saw if from about 1000 feet above it on a mountain cliff) and there are some interesting waterfalls but not much to see unless you live there.
